Day 3 | Frozen Paleo challenge

Image
Day 3 Today is off to a great start, the larger breakfast was 100% the right idea.  I started the day with a bacon and egg muffin with half an avocado.  It has always been a challenge for me to eat a good breakfast without over eating or under eating.  As with everything this month it will be a trial and error effort to give myself the best chance to succeed. well the lunch was not so good again today. Same as before the box made it look like Gordon Ramsay and the cooked meal looked more like worst chef in America.  The cauliflower rice was extremely watery and the chicken was bland and the vegetables non existent.  I know I shouldn't expect much out of a frozen paleo meal but I don't expect to be 100% let down.  I can not see much of a future when the meals are of a dismal variety and even worse taste. There was a slight glimmer of hope though today I had to go to Costco for a office supply run and I came across some paleo friendly bars. ...

Day 2 | Frozen Paleo challenge

Day 2 The day started out again with the standard hard boiled egg and a slight change in the coffee, I went to Starbucks and got a cold brew with coconut milk added.  It was good but as I sit here it has become clear I will be getting up earlier and making sure I eat a good breakfast.  To keep with the theme of this challenge I will take a look at paleo breakfast options at my local stores.  Although bacon and eggs will be a fall back meal because its quick and delicious. Getting through lunch was less than enjoyable, I waited way too long to get food in me.  The food option for today was also only 150 calories which is not enough to fuel me for sure.  I had to swing home to grab a lara bar and a hard boiled egg to supplement lunch and keep me from being absolutely miserable and hungry all day. The lunch selection today was worthy of a little excitement until I cooked it and saw it.  The first thing that stuck out to me was how little it looked any...

Day 1 | Frozen Paleo challenge

Image
DAY 1 Started off the morning with some coffee and a hard boiled egg, I was pretty satisfied for a bit but will probably have to up my breakfast intake so I dont lose my mind waiting for lunch!  I havent found any frozen paleo friendly breakfast meals yet but there are so many ways to stay within the paleo limits that I think I am ok with not having frozen meals in the morning. Lunch came in and I went with my first frozen paleo meal and it was the one that actually made me think of doing this for 30 days.  I have to admit as far as looking like the pic on the packaging its a solid 2/10.  But the taste is not terrible, it has some spice but the consistency is not what I was really hoping for.  I will try cooking it not in the microwave next time to see if that has any effect on it.  I did get a piece of what might have been cartilage or some other "grissel" type texture.  3/4 the way through the meal I am getting a good amount of heat and I like that...

30 Day Challenge | Frozen Paleo meals

A few days ago I was doing a little grocery shopping and as I was walking towards the frozen fruit I noticed that the paleo section has gotten substantially bigger than I remember.  I stopped and took a look at some of the stuff they have available now.  Its no longer 3 different types of gluten free breads and one or two options, there is now some really good looking options!   But are they any good?  Are they anything but a cheap meal to make a quick buck? During my knee and shoulder rehabilitation I first was introduced into the paleo diet and crossfit.  I started going to my local crossfit gym, Crossfit Hinesville and met Tina who was a wealth of knowledge and steered me in the right direction.  She helped me and pushed me to improve my overall strength and functional movements.  Combining time in the gym with her and my daily physical therapy was tough but I also had to do morning PT with my unit every day. It was the mental game ...

Brisk Mate Dragonfruit | The tater taste test

Image
Brisk Mate dragonfruit and all the other flavors have been marketed by OpTic Gaming for a while now and I finally decided to give it a shot. Tuesday night I finally broke down and ordered some off Amazon.  I have been waiting for it to be available here in Orlando and was tired of waiting.  Good morning to me it came in while I was getting up for work today!!!!  I rushed downstairs to see what was waiting for me and there it was in all its brown amazon box glory. The real excitement was when I unboxed it and threw it in the fridge and knowing I would get to try it when I got home from work. There it was nice and cold just waiting to be sipped.  I was happy that it was not overpowering of cheap artificial flavors.  It had a mostly tea taste with a slight hint of fruit.  Now I am no dragonfruit expert but I could taste it.  I would love to be able to sit here and go on and on about the subtle notes in every can but all I can say is its good. Easi...

Where it all started for me.

November 4th, 2005 I was in Baghdad and on my way to my life being forever changed.  I was an army medic with the 3rd infantry division at the time and had been in country for roughly 11 months already and looking forward to getting home.  That day did not turn out how I could have ever expected it.  My deployment was cut short that day and the lives of two of my closest friends were cut short and I didn't know how I would learn to handle it. When I got back to Fort Stewart it took some time for me to even talk to people without an overwhelming urge to blow up on them for the smallest of things.  With that being said having a short fuse and working in a job where pretty much everyone is your superior day to day wasn't easy.  I did not show up many days to work almost out of self preservation, knowing it was easier to bullshit my way out of not going to formation than it was to explain why I told a staff officer every profanity I could think of to describe thei...
